Found out that Mexico, after all, was conquered by the French during the 1860s, thanks to a review on a Mexican-French restaurant from Jonathan Gold, a food critic at the Los Angeles Times, which Chuvaness mentioned in her review of Din Tai Fung at SM Megamall. The search strings led me to two things (not counting a wiki on Veracruz): a wonderful recipe on the Yucatan version Pollo en Escabeche, only having a citrus-and-spice twist on our adobo; and The Execution of Emperor Maximilian, a series of five paintings by Edouard Manet.
